Two chefs. Same years of experience. Completely different abilities.

Chef A has tasted 10,000 dishes. She can walk into any kitchen, smell what's cooking, and know instantly: needs more acid, too much salt, wrong temperature. She can't always explain why. She just knows.

Chef B has read 10,000 recipes. He can recite the Maillard reaction temperature. He knows the French mother sauces. But put him in front of a stove with unlabeled ingredients, and he freezes.
